Baked White Fish with Pesto

- 1 tbsp Coconut Oil melted
- 6 tbsp Pesto
- 4 tbsp Whole Wheat Breadcrumbs
- 4 White Fish Fillets such as cod or haddock
Preheat oven to 375. Spread the coconut oil on a large rimmed baking sheet and set aside.
Combine pesto and breadcrumbs in a small bowl. Mix with a spoon or your fingers.
Place the fish fillets on the baking sheet. Spread a heaping spoonful of the pesto mixture onto each piece of fish, gently pressing down.
Bake 8-10 minutes, until fish flakes easily with a fork.
